Do I need lids for dough trays?

A lid is only necessary for the top tray in a stack. DoughMate® trays are designed to stack on top of each other, so each tray effectively serves as a lid for the one below it. The top tray in the stack is the only one that needs a separate lid to protect dough from drying out and to allow controlled airflow for proper fermentation. DoughMate® lids are designed to fit both Premium and Artisan trays.

NSF® certification means the containers have been independently tested and certified as safe for food contact and meet strict commercial kitchen standards.
